1 recipe chocolate ganache (see below)

3/4 cup almond meal

1/3 cup cake flour

1 tablespoon cornstarch

3 egg yolks

6 tablespoons sugar

1/2 teaspoon vanilla extract

1/2 teaspoon lemon zest

3 egg whites

2 tablespoon sugar

2 tablespoons butter (warm)

1/2 cup water

2 tablespoons sugar

1 tablespoon amaretto (optional)

1 egg white

3 tablespoons sugar

6 tablespoons unsalted butter (room temperature)

1/2 teaspoon vanilla extract

1/2 tablespoon amaretto (optional)

6 tablespoons heavy cream

1/2 tablespoon light corn syrup

6 ounces dark chocolate (chopped into small pieces)

1/2 tablespoon amaretto

1/2 teaspoon vanilla extract

1/2 cup sugar

1/2 cup almonds (chopped)
