Quinoa with Zucchini and Carrots

What you will need

1 cup uncooked quinoa

2 shredded zucchini

3 shredded carrots

Water or broth to cook

Salt & pepper to taste

How to cook

Sautée onion and garlic

Sautée the onion and garlic in olive oil

Add zucchini and carrots

Add the shredded zucchini and carrots

Add quinoa

Add quinoa and Mix well

Cover with water and cook

Cover with water or broth and cook until quinoa is done (follow package instructions

Serve!
