White Sauce Chicken Enchiladas

My kids don't like green or red sauce enchiladas but LOVE this style of enchiladas

What you will need

2 cups shreddes jack/cheddar cheese

8 flour tortillas or about 16 corn tortillas

3 tablesppons butter

1 cup sour cream

1 4oz can diced green chilies

2 cups shredded chicken

3 tablespoons flour

2 cups chicken broth

salt/pepper

How to cook

Preheat the oven to 425 degrees

Shred cooked chicken and mix with 1 cup of cheese

Roll/fill the tortillas with the chicken mix and fill a 9X13 baking dish

Cook the diced chillies on low

In a saucepan, melt the butter and add in the 3 tbsp of flour. Mix and cook for about one minute

Add in the 2 cups of chicken broth, whisking until it’s a smooth consistency. Whisk over medium heat until it is thick and creamy (usually takes about 5-8 minutes)

Mix in the sour cream, salt/pepper, and the can of chiles from the pan

Pour the sauce over the tortillas and cover with another cup of shredded cheese

Bake for 20-25 minutes or until the cheese is golden brown
