Chicken Scaloppine with Pancetta and Mozzarella

 

Classic tomato and basil flavours are irresistible teamed with oven-crisped pancetta and melting mozzarella.

What you will need

1 teaspoon olive oil

3 chicken breast fillets, halved horizontally

12 slices Primo Gourmet Selection Pancetta

150g mozzarella, thinly sliced

Fresh basil leaves, to serve

2 tablespoons olive oil

1 onion, finely chopped

2 garlic cloves, finely chopped

1 carrot, peeled, finely chopped

1 celery stick, trimmed, finely chopped

125ml (1/2 cup) dry white wine

700ml btl passata (tomato pasta sauce)

1 dried bay leaf

1 teaspoon caster sugar

1 teaspoon dried oregano leaves

1 teaspoon balsamic vinegar
