Christmas has to be my favourite time of year to bake, and despite the hot weather I still love slaving away in the kitchen to dream up new and delicious holiday-themed treats. What you will need

120ml vegetable oil

½ cup golden syrup

¾ cup packed dark brown sugar

2 large eggs

¼ cup buttermilk

1 cup plain flour

½ cup cocoa powder

¾ tsp baking soda

½ tsp coarse salt

2 tsp ground ginger

1 tsp ground cinnamon

¼ tsp ground cloves

¼ tsp nutmeg

110g cream cheese at room temp

25g butter, softened

¾ cup icing sugar

Pinch of salt

½ tsp vanilla

1 egg white

¼ cup caster sugar

2 tbsp light corn syrup or glucose syrup

1 tbsp water

1 tsp vanilla extract
