Cock-a-leekie

 

Australian Gourmet Traveller recipe for cock-a-leekie.

What you will need

1.2 kg whole chicken

2 cloves garlic, thinly sliced

1.4 kg (about 4) leeks, thinly sliced

2 celery stalks (300gm), trimmed, thinly sliced

4 thyme sprigs

Large pinch of cayenne pepper

2½ litres (10 cups) chicken stock

1 cup (170 gm) pitted prunes

2 tbsp coarsely chopped oregano

2 tbsp coarsely chopped flat-leaf parsley

To serve: mini scones or soda bread
