1 cup (250ml) coconut milk

½ cup caster sugar

2 cups (500ml) thickened cream

1 vanilla bean, split and seeds removed

2 tsp coconut extract

1 cup caster sugar

120ml water

1 cup thickened cream

2 tsp sea salt
