Combine a crisp cookie and a fudgey chocolate brownie and what do you get? A brookie! This delicious hybrid dessert is quite possibly my new favourite thing to bake (and eat) right now, and I am hoping they become the new trend. Move over, donuts! What you will need

350g dark chocolate, chopped

45g butter

3 eggs, at room temperature

1 cup caster sugar

½ cup cornflour

1 tbsp instant espresso powder

1 tsp baking powder

1 tsp vanilla extract

1 cup caster sugar

⅓ cup water

½ cup thickened cream

175g butter

1 tsp sea salt
