Omelette of Meli Melo and Caramelised Onion

What you will need

3 eggs

80 ml pouring cream

1 tbsp finely chopped chives, plus extra to serve

1 tbsp butter

50 gm coarsely grated meli melo (or other semi-hard cheese, such as cheddar)

Soft herbs such as chervil, dill and tarragon, to finish

  Caramelised onions 900 gm onions (about 5), thinly sliced

40 gm butter

1½ tbsp olive oil

1 tsp caster sugar

3 tsp tiny capers in salt, rinsed, drained
