Salmon and Pea Lasagne

 

Add a new twist to traditional Italian lasagne with this delicious salmon and pea version.

What you will need

6 (about 120g each) salmon fillets

1 bay leaf

2 strips lemon peel

2 teaspoons olive oil

1 brown onion, finely chopped

500g frozen peas

1/2 cup (125ml) thickened cream

2 bunches spinach, ends trimmed

500g smooth ricotta

2 tablespoons coarsely chopped dill

2 teaspoons lemon rind, finely grated

6 fresh lasagne sheets

1/2 cup (40g) finely grated parmesan

Mixed salad leaves, to serve
