Salmon, Avocado and Asparagus Salad

 

This salmon salad takes only 10 minutes to make - Perfect!

What you will need

1 bunch asparagus, trimmed, cut into 4cm lengths

100g snow pea sprouts, trimmed

1 telegraph cucumber, chopped

1 avocado, cubed

415g can red salmon, drained, skin removed, broken into large chunks

2 tablespoons light sour cream

2 tablespoons whole-egg mayonnaise

1 tablespoon hot water

2 teaspoons lemon juice

1 tablespoon finely chopped dill
