Slow-cooker Beef and Lemongrass Pot Roast


There's something comforting about dinner in the slow cooker, plus it's so convenient. But, no time? Just pop the same ingredients in the pressure cooker!

What you will need

3 teaspoons peanut oil

800g beef blade roast

6 eschalots, peeled

2 garlic cloves, thinly sliced, halved

4cm piece fresh ginger, peeled, finely grated

1 tablespoon tomato paste

1 1/3 cups Massel beef stock

1/3 cup shao hsing (Chinese cooking wine)

2 tablespoons brown sugar

2 teaspoons soy sauce

2 carrots, diagonally sliced

1 lemongrass stalk, trimmed, quartered

2 star anise

Mashed pumpkin, to serve

Steamed broccolini, to serve
