Spiced Chicken with Carrot, Chickpea and Green Chilli Salad

 

Emma Knowles fast recipe for spiced chicken with carrot, chickpea and green chilli salad.

What you will need

2 tbsp olive oil

2½ tbsp vegetable oil

1 tbsp finely grated ginger

1 tsp ground chilli

1 tsp ground coriander

1 tsp ground turmeric

1 tsp garam masala

Juice of 1 lime

2 garlic cloves, finely chopped

8 chicken thigh fillets, skin on

To serve: thick plain yoghurt

  Carrot, chickpea and coriander salad 60 ml (¼ cup) vegetable oil

1 long green chilli, thinly sliced

1 sprig curry leaves

1 garlic clove, finely chopped

800 gm canned chickpeas, drained and rinsed

2 carrots, cut into julienne

Juice of 2 limes, or to taste

¾ cup coarsely chopped coriander
