Goat Cheese and Caramelized Onion Potato Galette

 

Delicious potato galette recipe, filled with goat cheese and caramelized onions and baked up to a crispy finish in a cast-iron skillet.

What you will need

1 medium onion, cut in half and thinly sliced

5 - 6 large Klondike Rose™ potatoes (no need to peel)

2 oz. (60 g.) goat cheese (about 1/3 of a small log)

1 Tbsp. butter, melted

1 Tbsp. olive oil

Salt and pepper, to taste
