What you will need

2 cups very hot water

8 oz. dried shiitake mushrooms (or ½ lb. fresh), reconstituted and sliced

1 Tbsp. vegan butter

½ medium brown onion, diced

1 lb. brown or white mushrooms, sliced

1 Tbsp. fresh sage, chopped

3 Tbsp. all-purpose flour

6 cups vegetable broth

1 Tbsp. soy sauce

½ Tbsp. vegan Worcestershire sauce

½ can (about 1 cup) full-fat coconut milk

½ Tbsp. apple cider vinegar

½ Tbsp. agave nectar

1 Tbsp. nutritional yeast

¼ cup cold water

1 Tbsp. cornstarch

¼ cup fresh parsley, chopped
