What you will need

2 Honeycrisp apples, baked or dehydrated into apple chips OR julienned

1 tsp cinnamon

1 cup wild rice, cooked according to the package

1 acorn squash, seeded and sliced 3/4 inch thick rings

1 tbsp vegetable oil

1 tbsp brown sugar (optional)

1 avocado, thinly sliced

1/2 cup raw sauerkraut

1 tbsp Dijon mustard

1 tsp maple syrup

1 tbsp apple cider vinegar

1 tsp olive oil

a pinch of salt to taste
