Skillet Chicken, Tomatoes and Bocconcini


An easy and delicious chicken breast recipe. A one-pan meal, with skillet browned chicken, tomatoes, pancetta and melted bocconcini.

What you will need

3 lbs. bone-in/skin-on chicken pieces (breasts, thighs, legs or drumsticks or combination)

Salt and freshly ground pepper

1 Tbsp. olive oil

5 oz. pancetta, diced

3 garlic cloves, thinly sliced

2 anchovy fillets (optional)

1/4 tsp. red pepper flakes

1 28 oz. can whole plum tomatoes

1 large sprig of basil, plus more chopped basil for serving

8 oz. bocconcini, halved (or use mozzarella cut into 3/4-inch pieces)
