What you will need

2 peaches, washed and diced

1 sprig of cilantro, stems removed

1 shallot, finely minced

2-3 tsp of lime juice

1 tsp olive oil (optional)

1/4 tsp Old Bay Seasoning (optional, you can just replace with salt or salt to taste)

1/4 tsp salt (to taste)

1/4 tsp cayenne pepper powder (optional, but so so necessary at the same time)

4 tortillas, heated as desired (I usually flick some water on each tortilla and then microwave for about 20 seconds)

2 cups baby spinach or greens of your choice

2 Gardein fishless filets, cooked and sliced

Extra lime for garnish
