Vegan Wedding Soup

What you will need

10 cups vegetable broth OR 10 cups water + 3 tbsp mushroom broth granules

1 cup red or green lentils (if you watch the video, I explain the different outcomes)

2 small carrots, peeled and diced

1 cup couscous (or acini de pepe pasta)

1/2 tsp garlic powder

1/2 tsp poultry seasoning

1/2 tsp red pepper flakes

1 1/2 cups chopped vegan breakfast sausage

1 heaping cup shredded kale

1 cup fresh chopped parsley

2 tbsp nutritional yeast (optional)

Salt and pepper to taste
