Slow Cooker Peanut Butter Chicken
What you will need
1/2 cup smooth peanut butter
1 tbsp honey
2 tbsp soy sauce
2 garlic cloves, minced
1 tbsp sriracha
1 cup unsweetened almond milk
1 pound chicken breasts (2-4 breasts)
1 red bell pepper, chopped or thinly sliced
rice
crushed peanuts for topping (optional)
cilantro for topping (optional)
How to cook

Add everything to slow cooker and mix it all together. Set slow cooker to high for 4 hours or low for 8.

When there is 1-2 hours left, shred the chicken and let cook in mixture for remaining time.

When ready, serve on rice (any kind, and however much you want)
