Fried Rice with Dried Shiitake Mushrooms and Eggs

What you will need
2 cup cooked rice
5 dried shiitake mushroom
1 bunch Scallion
3 eggs
salt and pepper
2 tbsp light soy sauce
2 tbsp oil
1 clove garlic and 1 shallot fine dice
CHINESE SAUSAGE ( ADD ON )
4 Chinese sausage
2 tbsp light soy sauce
1 tbsp Shao Xin wine

Cooked rice then fluff up and set aside , Presoak dried shiitake mushroom with hot water then drained and dice it up , fine dice shallot and garlic too

With oil sautรฉ the shiitake mushroom with dice garlic and shallot till fragrant but not burn , then add in the season beaten eggs and top with cooked rice , let the eggs half set then only flip once

Let the eggs half set again then season with light soy sauce , dash of salt and pepper then stir fry and TOP with Scallion and fry till itโs dry and fragrant , off heat and enjoy as it is ,

Pre soak for a minute then Remove the casing of the Chinese sausage then thinly slice , steam for 30 minutes then add in 2 tbsp Of light soy sauce and 1 tbsp Of Shao Xin wine and steam another 10 minutes,
