What you will need
BAK CHANG SAUCE MIXTURE
2 tbsp light soy sauce
1 tbsp dark sauce / 1 tsp five spice
dash cinnamon powder
1 tbsp white pepper
1 tbsp sugar
1 sesame oil
3clove / 2 star anise
2 tbsp salt
OTHER INGREDIENTS
1 1/2 kg pork belly

Mix well the Bak chang sauce , Pat dry season with sal on pork belly meat side only , then spread generously the bak chang sauce mixture then tie it up firmly then pay dry the skin and apply vinegar

wrap both side with foil then Refrigerate it overnight , following day pat dry then pock the skin with ice pick

baked it at 82 C for 3 hours , Then Turn up the heat to 160 C for 1.5 hour to 2 hours , lastly turn up to 220 C for 30 to 40 minutes to get the skin crispy

Slice it up and enjoy .
