SAMBAL SAUCE
3 tbsp ready to eat sambal
2 tbsp light soy sauce
2 tbsp sugar

Deep fry the seasoned fish collar then drain and set aside on paper towel

With some oil sauté the shallot for a minute then add in the sambal and sauté for half a minute
