Cheap healthy soup

What you will need

2 onions

1 leek

1/2 pint dried yellow split peas

1/2 pint dried green split peas

1/2 pint lentils

3/4 pint frozen peas

1 smoked ham hough

How to cook

1

Chop 2 onions and put in pot with a little oil to fry

2

Chop a small leek and add to the pot cooking for a few mins

3

Add the ham Hough and enough boiling water to cover

4

Simmer for 1 hour at least (longer the better)

5

Cool and put in fridge overnight

6

Put the dried ingredients to soak overnight in the fridge (they will double in size so full pint glasses to the top with cold water)

7

The next day, when you take out the pot, remove the fat and discard.

8

Remove the Hough to separate the meat saving the juices/jelly.

9

Add one Knorr pork and one Knorr ham stock cube to the pot.

10

Add the soaked ingredients from the fridge to the pot and extra water as required.

11

Reheat and simmer what's in the pot for 30-40 mins while you strip the meat from the Hough with 2 forks (this allows you to get rid of the gristle). NOTE: When it comes to the boil, there will be a bubbly layer on top which I always remove.

12

Add the 3/4 pint of frozen petits pois and bring back to a simmer for 5-10 mins

13

Blend the contents of the pot till smooth

14

Add the stripped meat and heat through

15

Eat!

16

Makes about 6-8 full bowls of thick hearty soup (fills my big pot)
