Refreshing cake
What you will need
20 sponge fingers
250 g mascarpone
200 ml whipping cream
200 g fresh fruits
fruit compote or sirup (sugar, water and vanilla at your taste)

Mix together the whipping cream with mascarpone straight from the fridge until fluffy.

Line a rectangular tin with sponge fingers dipped for 2 seconds in sirup/compote, then add a layer of cream and top with fruits.

Repeat step 1. Cover the tin with cling film and leave at least 3 hours in the fridge before serving.
