They may look like rocks but they're soft and delicious inside!
What you will need
100g sunflower spread / safe 'butter'
85g granulated sugar
100g corn starch
30g potato starch (not flour!)
50g sorghum flour
40g rice flour
2 tsp gluten-free baking powder
1/4 tsp xanthan gum
1.5 tsp mixed baking spice / pumpkin pie spice
1/2 tsp vanilla extract
1 tbsp lemon juice
Finely shredded zest and juice of 1/2 an orange
90ml coconut milk or as required
How to cook
Preheat the oven to gas 4 / 180C / 350F and line a cookie sheet with parchment paper
Cream together the sugar and 'butter'
Add the rest of the dry ingredients including the raisins and mix
Add everything else leaving the milk until last and add enough so you have a wet but very thick batter
Bake for 22 - 25 minutes until firm to the touch
Let cool then dust with powdered sugar to serve
