Resep Vietnamese Chicken Curry (kari Ayam)

 

Monic's Simply Kitchen berisi resep makanan dan minuman praktis

Yang akan Anda perlukan

1kg of whole chicken or chicken thigh

3 tbsp. curry powder

½ tsp. Chinese 5-spice powder

2 tsp. (preferably natural) unsweetened cocoa powder

3 garlic cloves, peeled and finely chopped

1/3 bulb of medium size onion, peeled and finely chopped

1/3 cup fish sauce

1/4 cup sugar

1 tsp. salt

5 potatoes (300g)

½ of 1 big size sweet potatoes (300g)

2 Carrots (150g)

1 can coconut milk (400ml)

1 tbsp. fish sauce

2 tsp. salt

3 tbsp. sugar

5 to 10 bay leaves

2 anises

2 piece of cinnamon stick (about 1 tsp. cinnamon powder)

2 sticks of lemongrass

2-5 chilies (depends on how hot and spicy you want your curry to be. Mine is rather sweet and mild at 2)

500 gr potongan daging ayam tanpa kulit

2 buah kentang ukuran sedang, potong ukuran besar

1 buah ubi jalar kuning, potong besar

1 buah wortel ukuran besar, potong ukuran tebal

1/2 sendok makan kecap ikan

1/2 sendok teh garam

2 sachet santan instan @65ml

5 lembar daun salam

1 buah pekak/kembang lawang

2 batang kayumanis panjang @3cm

1 batang serai, ambil bagian putihnya memarkan

1 sendok makan minyak untuk menumis

500 ml air

2 sendok makan bumbu kari bubuk

1/4 sendok teh rempah 5 spices/ngohiong

1 sendok teh coklat bubuk

2 siung bawang putih, cincang halus

1 buah bawang bombay ukuran kecil, cincang halus

4 sendok makan kecap ikan

1 sendok makan gula pasir

1/2 sendok teh garam
