Baba Ghanoush


Baba Ghanoush (sometimes referred to as Baba Ganush) is a classic mediterranean dip made from roasted/grilled aubergines/eggplants.  This dip is normally served as an appetiser or starter along with pieces of pita bread or khubz.

What you will need

3 whole medium eggplants or 1 large one

1-2 tbsp. extra virgin olive oil (plus some extra for drizzling in the end)

1-2 tbsp. tahini (recipe given in instructions below)

2-3 cloves of garlic, crushed to a paste (you can use more or less depending on your taste)

juice of 1-2 lemons (about 4 tbsp.)

1/4 tsp. freshly ground cumin powder

salt to taste

1/4 tsp. chilli powder or cayenne pepper

1 tbsp. chopped fresh coriander
