Pan Fried Herb Chicken and Red Pepper-walnut Couscous


Aromatic and flavorful meal... I fell for this dish so much that I want to make it quite often. Absolutely easy to make meal which tastes spectacular. This is totally my kind of dish, easy to whip up and comforting to the soul. I marinated the chicken with rosemary and thyme, these herbs flavored up the chicken greatly, it turned out to be aromatic and flavorful. Couscous has been one of my favorites, it goes along with literally anything and is cooked in a matter of seconds. To the browned onions I added red pepper and walnuts, sautéed well and cooked the couscous in chicken stock. It was a blast of flavors to this simple dish. What you will need

Chicken breasts- 2

Fresh Rosemary leaves- from 2 stalks

Fresh Thyme leaves- from 2 stalks

Grated lemon skin- 2 tsp

Whole black peppercorns- 1 tsp

Olive oil- 1½ tbsp (or use butter)

Salt- to taste

Ground pepper- to sprinkle over chicken

Olive oil or butter- 2 tbsp for pan frying

Butter- 1 tbsp

Whole cardamoms-2

Whole cloves-2

Bay leaves-2

Onions, chopped thin and long- 1, large

Garlic, chopped- 2 cloves

Red pepper, chopped- 1

Walnuts, halved- ¼ cup

Chicken stock- 1½ cups

Couscous- 1¾ cups

Ground pepper- ½ tsp

Salt- a few pinches
