What you will need

4- pound beef sirloin (trimmed)

2 Tbsp olive oil

1 garlic clove (peeled and crushed)

1–2 Tbsp balsamic vinegar

⅔ cup red wine

2 cups beef stock

leaves A few tarragon sprigs (chopped)
