The Joy Luck Club Eggplant in Garlic Sauce

What you will need

3 Medium size Eggplants

2 Tbsp chilli garlic sauce

2 Tbsp Chinese rice wine vinegar

2 Tbsp Soya Sauce

2 Tbsp Garlic (Finely chopped)

2 Tbsp Ginger (Finely chopped)

1 Tbsp Red Chilli (Finely chopped)

1 Tsp Sugar

Salt (to taste)

5 Tbsp Vegetable oil

3 Tbsp Spring onion

2 Tbsp Coriander leaves
