2–3 tbsp olive oil

1 cup risotto rice

2 cups chicken or vegetable stock

3½ tbsp unsalted butter

8 ounces cherry tomatoes (halved)

cup ⅓mascarpone cheese

1 ounce Parmesan cheese (grated)

Sea salt and freshly ground black pepper
