Vegetable Cutlets in Tomato-spinach Gravy

 

Pan fried vegetable cutlets dipped in tomato-spinach gravy, couldn't get any better... If you feel vegetarian food is boring, you are definitely missing out on some of the cool ways to make vegetarian food fancy and delicious. Honestly, my Man does think vegetarian food is boring. On the other hand, I love veggie food especially vegetarian Kerala dishes. The only way to make my Man eat vegetarian food is by making some fancy twists to it. This is one such dish, I made vegetable cutlets and dipped them in a delicious tomato-spinach gravy and served along with chapati. My man finished the entire platter in no time. It's that delicious, you gotta try this and make your family love vegetarian food :) I pan fried the veggie cutlet as less oil is used for pan frying. If you prefer, you could totally deep fry the cutlets. After I made the tomato and spinach gravy, I dipped the cutlets in it. This can be served as an appetizer or as a main dish along with chapati, naan or rotis.   Vegetable

What you will need

Carrots, shredded- 3

Peas- 1 cup

Spinach, roughly chopped- 1 cup

Cooked Potatoes- 3

Chili powder- 1 tsp

Garam masala- ½ tsp

Coriander powder- 1 tsp

Cumin powder- ½ tsp

Salt- ¼ tsp

Corn starch- 2 tbsp combined with ¼ cup water

Bread crumbs- 1½ cups

Oil- ¼ cup for pan frying

Oil- 2 tbsp

Onion, chopped- 2

Tomatoes, chopped- 2

Spinach leaves- 1 cup

Chili powder- ½ to ¾ tsp

Garam masala- ½ tsp

Coriander powder- 1 tsp

Salt- ¼ tsp

Cilantro, chopped- 2 handfuls
