This is similar to a green enchilada bake, but simplified. With only 3 ingredients and 30 minutes, have this delicious dinner on the table. Serve with your favorite grain to soak up all the tasty sauce.

15 oz. jar Salsa Verde
4 oz. shredded Monterey jack
1 lb Frozen Brown Rice

Gather and portion all ingredients.

Set oven to 350°F

Cut the chicken breasts into quarters by cutting in half horizontally, and then in half vertically.

Cover the bottom of a 1.5 - 2 quart baking dish with the chicken and pour the salsa over the top.

Put the baking dish into the oven to bake for 25 minutes.

After 25 minutes, remove the dish from the oven and top with the shredded Monterey jack cheese.

Increase oven temp to 400°F

Bake in the 400° oven for 5 more minutes to melt the cheese.
