What you will need

1 tablespoon oil

1/2 pound shrimp (shelled and deviened)

1/2 cup white wine

1 batch quinoa risotto (see below)

1 batch meyer lemon pesto (see below)

8 baby artichoke hearts (stems trimmed)

1 tablespoon olive oil

1 onion (diced)

2 cloves garlic (chopped)

1 cup quinoa

1/2 cup white wine

3 cups chicken broth (or vegetable)

1/2 cup parmigiano reggiano (grated)

1 tablespoon butter

salt and pepper to taste

1 meyer lemon (cut into pieces and seeded)

1/2 cup basil (packed)

1 clove garlic

2 tablespoons pine nuts (toasted)

1/4 cup parmigiano reggiano (grated)

3 tablespoons olive oil

salt and pepper to taste
