Bacon and Radicchio Risotto


A recipe for simple risotto with crisp bacon & radicchio - make a perfect one-dish dinner!

What you will need

8 cups (390g) torn radicchio leaves

sea salt

fresh ground black pepper

6 cups (1.5L) chicken or turkey stock ((preferably homemade))

1/3 cup (60g) peeled and minced shallots

1 1/4 cups (240g) carnaroli or arborio rice

1/2 cup (125ml) dry white wine

1 1/2 teaspoons minced fresh thyme

optional: 2 cups (260g) diced (in small pieces) cooked chicken or duck meat

1 cup (90g) grated Parmesan (asiago, or pecorino cheese, plus additional for finishing)
