Beef-bacon Wrapped, Stuffed Passover Sausage

What you will need

6-8 Jack’s Gourmet Passover sausages, your choice of beef kielbasa or spicy southwestern style (or both)

1 onion, finely diced or grated

1 Tbsp olive oil

1 cup cooked quinoa

½ cup chicken stock

salt, pepper and dried parsley to taste

6-8 thin slices beef bacon, beef fry or pastrami
