Braised Potato Salad with White Beans

 

A hearty potato salad that uses braised baby potatoes, cannellini beans, and an easy yogurt-parsley dressing. Perfect as a picnic side or filling lunch.

What you will need

3/4 lb yukon gold baby potatoes

1 cup water

3 cloves garlic

2 tablespoons butter

1/4 teaspoon salt

1/4 cup whole-milk goat yogurt (or greek yogurt)

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon zest

1/4 cup minced fresh flat-leaf parsley

1/4 teaspoon black pepper

Salt, as needed

3/4 cup cannellini beans, drained and rinsed if using canned

1/4 minced cup scallions
