What you will need

2 medium eggplant (cut into 1/2 inch cubes)

1 tablespoon oil

1 onion (chopped)

3 tablespoons pine nuts

3 tablespoons raisins

1 tablespoon red pepper flakes

2 tablespoons sugar

1 teaspoon cinnamon

1 teaspoon cocoa powder

2 teaspoon fresh thyme leaves

1 cup marinara sauce

1/3 cup balsamic vinegar

salt and pepper to taste

5 leaves mint (chopped, for garnish)
