What you will need

1 tsp salt

2 tsp baking soda

2 tsp ground cinnamon

3 carrots shredded or pulsed in a food processor to small bits

1/2 cup vegetable oil (or 3/4 cup unsalted butter - melted)

2 cups sugar

3 eggs

2 tsp vanilla

1 cup buttermilk or 1 cup milk + 1 tbsp lemon juice

8 oz. cream cheese room temperature

1/2 cup unsalted butter room temperature

1/2 cup powdered sugar or more to taste

1 tsp vanilla
