Cauliflower Stir Fry with Quinoa and Hummus

 

A simple cauliflower stir fry that comes together in less than 30 minutes and can easily be switched up for whatever vegetable/grains you have on hand.

What you will need

1 tablespoon peanut oil or other high heat oil

1 small red onion sliced

1 red pepper sliced

3 cups cauliflower florets

2 teaspoons fresh minced ginger

2 to 3 tablespoons soy sauce

2 to 3 tablespoons rice vinegar

1 tablespoon sesame seeds

1/4 cup hummus for serving

Sesame seeds for serving

2 cups cooked quinoa for serving
