Cherry Gateau Basque


Cherry Gâteau Basque is a traditional French dessert made of two layers of pastry filled with cherry preserves. This is a cake meets pie and is perfect for filling with summer fruit!

10 tablespoons unsalted butter, at room temperature

1/2 cup sugar

2 eggs, divided

1 egg yolk

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

2/3 cup cherry preserves

1-1/2 cups mixed fruit
