Chicken Tacos with Mashed Pinto Beans

 

I was in the mood for a healthier take on refried beans. To avoid adding lard, I simply mashed pinto beans in some of their own cooking liquid to achieve a similar texture.

What you will need

1 pound dried pinto beans

1/2 white onion, chopped

1 pint cherry tomatoes, halved or quartered

Cilantro, for garnish

Queso fresco

Avocado

Limes, quartered

Corn tortillas, at least 2 per person

4 chicken thighs

1/4 teaspoon cayenne pepper

1/4 teaspoon Mexican chili powder

1/4 teaspoon paprika

1/2 teaspoon sea salt

Freshly cracked pepper

Extra-virgin olive oil
