Colombian Chicken Empanadas

 

Since so many of you have asked me how to make empanadas with chicken instead of beef, I’m now posting my recipe for making Colombian Chicken Empanadas.

What you will need

1 chicken breast medium-sized

2 green onions white part only

1/4 white onion

2 cloves garlic finely chopped

water enough to cook the chicken

2 Russet potatoes large, cut into cubes

1 1/2 teaspoon salt or to taste

water enough to cook the potatoes

oil vegetable, canola, corn

3 cups water hot

1 chicken bouillon optional

1 1/2 teaspoons food coloring Sazón Goya Triguisar or homemade substitute

2 tablespoons butter softened or melted

1 teaspoon salt or to taste

3 cups cornmeal pre-cooked, to make arepas

2-3 tablespoons olive oil

3 green onions finely chopped, white part only

2 cloves garlic finely chopped

2 tomatoes medium-sized, chopped

1 teaspoon cumin powder

1 chicken bouillon optional

salt to taste

pepper to taste

1/2 cup white rice cooked

1/2 cup cilantro finely chopped (optional)
