Course 9: Northwest Pozole

 

Not at all traditional, this pozole recipe takes inspiration from Vietnamese cuisine and northwestern ingredients.

What you will need

Dried hominy

Water , plus extra for juice

Geoduck , whole

Ice water , for ice bath, as needed

Cilantro , bunch

Flat-leaf parsley , bunch

Watercress , bunch

Pickled garlic, as needed

Tortillas, as needed

Salt , finely ground, as needed

MSG , finely ground, as needed

Lime juice, as needed

Fish sauce, as needed
