What you will need
2 pork trotters (feet), well washed and sliced in half
400 g fresh pork rind, well-washed
300 g fresh ham hocks/pork knuckles, cut into smaller pieces
1 - 2 pork ears (around 200 g), optional
10 whole peppercorns
1 tbs sea salt
3 bay leaves
300 ml red wine vinegar
3 l cold water
1 carrot (80 g), sliced
40 g parsley root, sliced
1 onion, chopped
