Curried Couscous-stuffed Chicken

 

If you can't fit the six stuffed breasts into the pot at once, cook in two batches for 15 minutes each.

What you will need

1 tablespoon olive oil

1/2 cup chopped onion

2 teaspoons grated peeled fresh ginger

3 garlic cloves, minced

3 tablespoons golden raisins

3 tablespoons sliced almonds

1/4 cup water

1/4 cup orange juice

1 1/2 tablespoons mango chutney

3/4 teaspoon ground cumin

3/4 teaspoon curry powder

1 teaspoon salt, divided

1/8 teaspoon ground red pepper

1/8 teaspoon ground cinnamon

1/3 cup uncooked couscous

2 tablespoons minced fresh cilantro

6 (6-ounce) skinless, boneless chicken breast halves

1/4 teaspoon black pepper

3 quarts water

6 tablespoons mango chutney (optional)
