Einkorn Walnut Coffee Biscotti


Inspired by Alice Medrich's Whole Wheat Biscotti, this is a nutty, toasty biscotti perfect for dunking in your morning coffee. This recipe is a result of my experimentation with Einkorn, but it can also be made with whole wheat flour.

What you will need

2 1/8 cup Einkorn flour or

2 cup whole wheat flour

1 tsp baking powder

2/3 cup packed dark or light brown sugar

4 tbs unsalted melted butter

2 large eggs

1/4 tsp salt

1 tsp pure vanilla extract

1 cup walnuts

1 tbs dark roasted ground coffee
