Encebollado Ecuatoriano Recipe (ecuadorian Fish and Onion Stew)
Pickled onions add a pleasant tang to this fresh fish stew recipe from the coastal region of Ecuador.
What you will need
Oil -- 2 to 3 tablespoons
Red onion, thinly sliced -- 1
Tomatoes, seeded and finely chopped -- 2
Cilantro, chopped -- 1/2 bunch
Paprika -- 2 teaspoons
Ground cumin -- 1 teaspoon
Stock or water -- 8 cups
Yuca root (cassava), peeled and cut into cubes (see notes) -- 1 pound
Salt and pepper -- to taste
Tuna or other firm, fresh fish, cut into chunks -- 2 pounds
Cebollas encurtidas (pickled onions) -- 1 recipe
