First Birthday Cake with Fresh Berry Yogurt


Instead of serving a sugar-laden layer cake for your child’s first birthday, consider this whole wheat birthday treat, sweetened with dates and applesauce, and stacked in two layers with fresh berry yogurt. Decorate the cake with sliced fresh berries if you like.

What you will need


1/2 cup full-fat coconut milk

1/4 cup unsweetened applesauce

1/2 cup dates (5 or 6), pitted and chopped

1 tablespoon flaxseed meal

1 teaspoon cider vinegar

1 teaspoon pure vanilla extract

3/4 cup whole wheat pastry flour

3/4 teaspoon baking powder

1/2 teaspoon baking soda

Fresh Berry Yogurt

1/2 cup whole-milk plain Greek yogurt

1/2 cup berries, such as blueberries or chopped strawberries

1 large date, pitted and chopped
